THE PRODUCTION PROCESS OF OUR EXTRA VIRGIN OLIVE OIL
1. WE MANUALLY HARVEST THE OLIVES EVERY 2 DAYS
The harvest takes place exclusively by hand, we only use mechanical tools that allow the olives to fall from the tree and subsequently proceed with separation and selection.
2. OLIVES ARE STORED ONLY IN BOXES (MAX 15Kg)
After the harvest, the olives are carefully arranged and stored in small boxes, which allow us better management and quality in the production chain of our Tuscan extra virgin olive oil .
3. WE BRING OUR OLIVES TO THE OLD LOCAL OIL MILL
Once the boxes arrive at the oil mill, they follow manufacturing processes that will transform the olives into a high quality oil!
What are these steps?
Simple, here they are explained in detail:

Defoliation, during this process the olives are separated from the leaves and other plant elements present.

Washing, the olives are washed mechanically on a belt
conveyor and clean from any residues (dirt, small insects, etc...)

Cold Pressing and Extraction, in this fundamentally important phase the Olives are pressed at low temperatures, to preserve their aroma and taste intact and therefore our Oil is extracted.

Oil Analysis, the result from pressing will then require meticulous laboratory analyzes to check and certify the acidity and other fundamental characteristics to fall into the Extra Virgin Olive category.
- Having been put into the bottle, we have finally reached the end of the production process and the Extra Virgin Olive Oil from Colle Paradiso is ready to be tasted and purchased in the company and online!
