PRODUCTION PROCEDURE AND CHARACTERISTICS
What is Vinsanto?
It is a type of sweet wine, made from white grape varieties, which goes through a process of drying and maturation in wooden barrels called "Caratelli".
But let's go into detail!
We will follow its production process in Colle Paradiso step by step.
- STEP 1 | COLLECTION AND DRYING
In this first phase of processing, the Trebbiano, Malvasia Bianca and San Colombano grapes are harvested late from our vineyards.
Subsequently all the grapes are placed on mats to dry, in order to make the sugar content more concentrated.
The drying process is natural and lasts approximately 2 months.
- STEP 2 | MACERATION AND PRESSING
Once 2 months have passed, it is time to continue the journey and our grapes are subjected to a maceration process and, subsequently, we extract our sweet nectar through a soft and light pressing of the must.
Once this process is finished, the Vinsanto is starting to take shape and the extracted liquid is placed inside the "Caratelli" and hermetically sealed.
- STEP 3 | SLOW AGING OF 7 YEARS
The aging process is very long, and Vinsanto matures over time thanks to its sugar content maintained during the previous phases.
For example, ours remains in the "Caratelli" for a period of approximately 7 years!
Once its long rest is finished, the Vinsanto del Chianti di Colle Paradiso is ready..
We proceed with careful bottling in small 0.50 size bottles.
